Warm Quinoa and Chickpea Salad (serves 1)
100g broccoli, roasted with cumin and paprika
100g cauliflower, roasted with cumin and paprika
80g quinoa, cooked
120g canned chickpeas
20ml apple cider vinegar
Dash of water
Combine broccoli, cauliflower, quinoa and chickpeas in a bowl. Crumble feta over the top. Combine tahini, apple cider vinegar and water in a small bottle or jar. Shake to combine and drizzle over salad.
